No Fuss And No Churn Banana And Coconut Ice-cream- Recipe

Hello My Wonderful Friends!

I have been experimenting few dessert recipes recently and the results are good so far. While some recipes do require preparation, baking and setting time with immense patience, at the end of the day when I need something to rewind, relax and just enjoy some music, I want something fast yet indulging.

Before I begin talking about the recipe, do remember that the part of the title says “NO FUSS”. So, this is not going to involve hours of churning, freezing and repeating the process over and over again.

NO FUSS AND NO CHURN BANANA AND COCONUT ICE-CREAM

Serves-1

 

INGREDIENTS;

3 Ripe Bananas

6 tablespoons of Coconut Milk

1 tablespoon of Nutella Hazelnut Spread (If you are conscious then you can skip this ingredient and go with dark chocolate sauce with toasted and chopped hazelnuts)

2 tablespoons of Crushed (Roasted and Skinned) Peanuts ( If you can, then buy already skinned ones.)

A tiny pinch of Coarse Salt

That’s it!! Seriously…

 

It is even more simple to follow the recipe;

 

METHOD:

Freezing the bananas;

Peel and chop the bananas in 1 inch chunks. Pop them in a freezer bag and store in the freezer. Let them sit for 3-4 hours. You can keep for longer.

Roasting the Peanuts;

In a pan, roast the peanuts on medium to low flame. You will start getting a nice nutty aroma and peanuts will gradually turn brownish.

I like peanuts bit charred as they give out strong nutty taste. Once it happens, transfer the peanuts to a waiting plate and let them cool down. Will not take longer than 10 minutes. Now, skin the peanuts and separate the white part. Process them for hardly 3 seconds just until the peanuts break down and turn into nice chunks. A little longer and you may end up with peanut meal(like almond meal). If you are skeptical just crush the peanuts with the back of the pan on a flat surface.

CHOCOLATE SAUCE;

Pour the 2 tablespoons of coconut milk and 1 tablespoon of Nutella in a non stick vessel. Keep the flame low so you do not burn anything. Gently stir for the mixture to combine as it justs start to boil. You will see the nutella melting into sauce like consistency. Add a pinch of salt and stir until the salt dissolves. The sauce should be ready in less than 3 minutes.

SERVING SUGGESTIONS;

When you want to eat, remove the bananas and blend them with 4 tbsps of coconut milk and 1 tablespoon of crushed peanuts until smooth. The consistency should be smooth and gooey. Scoop out the mixture. Pour over the warm sauce and top off with even more crushed peanuts.

I had some friends coming for a short meeting and they insisted on not having any hot drinks. I had some bananas in the deep freeze and the other ingredients. When they were done with eating within 5 minutes, they asked for the recipe and could not believe the process could be this easy.

But, now you do!

I hope you will enjoy this healthy, quick and comforting recipe. The best part about this recipe is that people of all ages can relish without guilt. Just make sure to not chug down a kilo of it everyday, lol!
