Easy Mango And Coconut Pudding- Gluten Free |No Cooking Required

Yesterday, I was craving for some sickly sweet treats. Although, I am not a hugeee fan of desserts, the hunger rises when you are required to stay away from something. I am pretty sure you all can relate with me on this.

Here it goes, one of my best friends is getting married and she has technically hired me to supervise and improvise the venue decor. I feel very lucky to have been given such a huge responsibility.. It shows how much she trusts me.

Buttttt, with the scenario, that I may either flourish or ruin the decor of my best friend made me skip a heartbeat. You know, you will be under extreme pressure when you are an important part of your loved one’s big day celebration..

Why am I talking about my friends wedding, decor etc etc on my blog and making you read it all?? Welll..I can not stand too much sugar. It makes me feel funny. And I wanted to be A-OK 👌🏻 while working on this project.

So, back to yesterday again, I went to the refrigerator and stood there looking at what I have got.

I saw two plump,little less than ripe mangoes, a tub of non fat yoghurt, canned cherries and choco chips. It struck me and I came up with a healthy, full of calcium, antioxidants and no refined sugar recipe!!! I call it ” The Craving Buster”.

The Ingredients are;


  1. 2 Mangoes
  2. 2 cups of Non-fat Yoghurt
  3. 1 1/4 tbsp Dessicated Coconut/ Roasted Coconut flakes
  4. 5 Cherries chopped (cherries in juice not syrup)
  5. 2 tbsp Dark Chocolate chips
  6. 3 tbsp Flaked Almonds
  7. 2 tbsp Oats

How to;

Chopped the mangoes and blend in a processor. You should be left with creamy, smooth , thick mango puree. In a non stick pan, dry roast flaked almonds, coconut and oats on low flame. You do not want to darken them. It should be done within 3-4 minutes.

After roasting.


Now, let’s start constructing the monster. Add a dollop of gently whipped yoghurt. Add the mango puree. Layer with half of the cherries and the roasted mixture. Make another layer of the same ingredients. Now finish off with some cherry syrup and dark chocolate chips!! That’s it.. Can be eaten right away or chilled.

Refrigerate for an hour or more. Ready to serve!!!

I can not express how much I enjoyed eating it. I did not only feel like my craving was taken care of, I felt full and more energetic. It is great to even serve as a dessert to family and friends.. Needs no cooking, except for the roasting and looks pretty.
